Kim’s Rye Round

When locked away in her recording studio, singer Kim Wilde sends out for cream cheese and cucumber sarnies on dark rye bread from her local deli.

1 teaspoon chopped fresh mint
squeeze of lemon juice
25g/1oz cream cheese
2 thin slices of black rye bread
1 cucumber, peeled, sliced
freshly ground black pepper

Mix the mint, lemon juice and cream cheese until well blended. Spread on both slices of bread. Pat the cucumber slices dry, arrange on top of the cream cheese and seaosn with pepper. Cover with the remaining slice of bread and cut into four. (Calories: 280)
